Pizza-Style Protein Meatballs

Ingredients

  • 1 tablespoon ground flaxseed

  • 3 tablespoons water

  • 1 lb organic ground beef

  • 1 lb organic ground turkey

  • 2 teaspoons garlic powder

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • 2 teaspoons onion powder

  • 2 tablespoons Italian seasoning

  • ½ cup chopped pepperoni

  • 1¼ cup no-sugar-added pizza sauce

  • ⅓ cup almond flour

Preparation

Step 1: Prep the flax “egg”
  • In a small bowl, mix 1 tbsp ground flaxseed with 3 tbsp water.

  • Let it sit in the refrigerator for 15 minutes until it thickens to a gel-like consistency.

  • Stir again before using.


Step 2: Preheat the oven
  • Preheat your oven to 400°F (200°C).

  • Line a baking sheet with parchment paper or lightly grease it.


Step 3: Make the meatball mix

In a large mixing bowl, combine:

  • Ground beef

  • Ground turkey

  • The prepared flaxseed mixture

  • Seasonings (garlic powder, onion powder, salt, pepper, Italian seasoning)

  • Chopped pepperoni

  • Pizza sauce

  • Almond flour

Mix everything thoroughly using your hands or a large spoon until completely blended.


Step 4: Shape the meatballs
  • Use a cookie scoop or spoon to portion out the meat mixture.

  • Roll into balls roughly 1½ inches in diameter.


Step 5: Bake
  • Place meatballs 1 inch apart on the baking sheet.

  • Bake for 22–25 minutes, or until golden brown and fully cooked through (internal temp of 165°F).


Step 6: Serve
  • Serve warm with extra pizza sauce for dipping.

  • Perfect with roasted veggies, zucchini noodles, or a fresh salad on the side.

  • Make it dairy-free: Choose dairy-free pepperoni or omit the cheese entirely.

  • Batch cook & freeze: These meatballs freeze beautifully for up to 2 months—just thaw and reheat.
