Preparation
Step 1: Prep the flax “egg”
In a small bowl, mix 1 tbsp ground flaxseed with 3 tbsp water.
Let it sit in the refrigerator for 15 minutes until it thickens to a gel-like consistency.
Stir again before using.
Step 2: Preheat the oven
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper or lightly grease it.
Step 3: Make the meatball mix
In a large mixing bowl, combine:
Ground beef
Ground turkey
The prepared flaxseed mixture
Seasonings (garlic powder, onion powder, salt, pepper, Italian seasoning)
Chopped pepperoni
Pizza sauce
Almond flour
Mix everything thoroughly using your hands or a large spoon until completely blended.
Step 4: Shape the meatballs
Use a cookie scoop or spoon to portion out the meat mixture.
Roll into balls roughly 1½ inches in diameter.
Step 5: Bake
Place meatballs 1 inch apart on the baking sheet.
Bake for 22–25 minutes, or until golden brown and fully cooked through (internal temp of 165°F).
Step 6: Serve
Serve warm with extra pizza sauce for dipping.
